tuition

- Private

I give private cookery lessons and normally teach the following cookery techniques:

Knife skills

Fish (preparing and cooking)
Shellfish (preparing and cooking)
Meat (preparing and cooking)
Vegetables (preparing and cooking)

Stock making
Savoury Sauces

Soups
Pasta
Soufflés
Canapés making

Gelatine
Meringues
Caramel
Custards
Ice creams
Sweet sauces

Bread
Cakes
Pastry

Jam and jellies
Preserves

However, if you are already familiar with the techniques and would prefer to learn some new recipes, I can provide you with a tailor made course to fit your needs. For example, some people simply want some new ideas for food for their family while others want some new dinner party menus. Taking a few lessons can re-invigorate your interest in food, which may have been eroded through years of cooking.

Courses are £40.00 per hour plus ingredients. Normally three hours at least are needed to cover a single technique.

- Group

If you would like to take a course with one or several friends, this is possible. A single lessons can be a fun event for a celebration such as a birthday. A course can be a way of learning to cook, while meeting up with friends regularly.

Courses are £25.00 per hour per person plus ingredients with a minimum of 2 persons and a maximum of 4. If you want more than four, and depending on your available kitchen space, I would work with another chef to ensure that everyone got sufficient attention.

Interviews

In the first in this series of podcasts exploring the origins and preparation of some of today's most innovative dishes, Chef Philippe Haag discusses celeriac. You'll hear what you can do with this unusual and often overlooked vegetable, including a step-by-step guide to making a French favourite: celeriac remoulade.
